White wine vinegar, long considered a staple in French
cooking, has an important place in Italian food as well;
white wine vinegar is great for marinades, salad
dressings and sauces. Try combining three parts
Sicilian extra virgin olive oil to one part vinegar (or
more to taste), some chopped garlic and dry herbs for
a homemade vinaigrette that takes just a minute to
make. White wine vinegar is also the base for making
homemade herb vinegars. Much smoother than
distilled white vinegar, far less sweet than balsamic,
white wine vinegar is versatile and delicious.
