"Tired of the same versions of pesto that are
available from so many gourmet shops these
days? Try these classic yet innovative blends from
Valle dell'Etna, available exclusively in the US from
All Things Sicilian.
While these are pestos, they are not meant to be
used alone as other pestos are, but rather as a
base for a wonderful dish, enhanced with the best
cream, a little garlic and a touch of cognac or wine.
Toss the completed sauce with pasta or use as a
topping for stuffed chicken breasts or pork loin
roasts, use to dress seafood-stuffed or pumpkin
ravioli. The finished sauce also makes a nice
sauce for a layering in a "white" lasagna featuring
delicate sheets of pasta, shrimp and vegetables.
